After spending many years in Asia, Michelle and Gareth McAllister were inspired to make a gin that combines Asian and Irish culture. Xin means ‘heart’ or ‘feelings’ in Mandarin. With that in mind, the botanical recipe is weighted towards Asian and European flavours: Juniper, rose, dill, lemongrass, persimmon, pineapple, lemon zest, orange zest, cinnamon.
